Mayumi Hattori

Executive Chef, Partner

I want to create a place where I can cook from the heart by creating thoughtful, healthy, original dishes that are best enjoyed with delicious drink and great company.
Mayumi has 15 years of cooking experience in award-winning kitchens ranging from Craigie Street Bistro to Toro to Straight Wharf Restaurant, where she spent the last nine years as Chef de cuisine. She’s trained under several James Beard winners including Tony Maws, Ken Oringer and Jamie Bissonnette. In 2014 Mayumi was awarded the Rising Star Chef designation.

At age six Mayumi’s curiosity for cooking was piqued by her Grandmother. They spent hours in the kitchen together, Mayumi helping her prepare simple and rustic Spanish dishes from humble ingredients. Each ingredient, picked fresh from the garden that morning, and prepared simply for dinner that evening.

Today, Mayumi’s cooking continues to draw on her diverse cultural food heritage with influences from Mediterranean, Asian and Californian cuisines. She fosters a kitchen culture that exudes great warmth and hospitality, balanced with precision and perfectionism.

Mayumi attended the California School of Culinary Arts in 2002.

Tanya McDonough

General Manager, Partner

I try to foster a warm and welcoming culture. I believe in impeccable customer service that is friendly and fun.
After graduating from the University of New Hampshire with a degree in social work and Spanish, Tanya started bartending at Michael Schlow’s Radius Restaurant in Boston under Wine Director Scott Fraley and Chef de cuisine Gabriel Frasca. Here Tanya learned the balance between upscale, unpretentious food, incredible wines and exemplary service.

Tanya’s intrigue with wine led her to study in Boston University’s wine program for two years. From there she worked as a wine and restaurant manager at Grill 23 in Boston under Wine Director Alex DeWinter, where she become a Certified Sommelier through the Guild of Sommeliers.

Her passion for wine and hospitality brought Tanya to Nantucket to work as a manager and sommelier at Straight Wharf and Ventuno restaurants where she’s been for the past 10 years. While there, Tanya was recognized as Coastal New England’s Rising Star Sommelier.

Tanya’s extensive wine knowledge, unwavering commitment to impeccable service and approachable, friendly nature will be a cornerstone of the Club Car’s culture.

Ty Costa

Director of Operations, Partner

As a people person, the restaurant business comes naturally to me because restaurants are really all about people. I will extend the highest level of hospitality to all who visit with us.
After graduating from Northeastern University with a BBA in Business Management, Ty came to Nantucket to work at Sankaty and pursue a career in golf management. He got hooked on hospitality while bartending at Straight Wharf Restaurant (SWR) 20 years ago. Ty became a known, friendly-face behind the SWR bar over the years where he built a loyal following of customers and staff.

In 2006, Ty and his two partners, Packy Norton and Barry Hannon, decided to pursue their own restaurant venture and opened The Vault Restaurant in Boston, MA. As a Managing Partner, Ty directed all daily operations including a staff of 30. He successfully ran the restaurant for nine years until he and his partners sold what had become a financial district staple.

Throughout the years, Ty has remained closely connected to the island and its flourishing restaurant scene. He always dreamed of opening a place on Nantucket when the right opportunity presented itself. He is incredibly grateful for the talented team that joined him in pursuit of this incredible opportunity; to carry on an island icon, The Club Car.

Ty also holds his Massachusetts real estate license and handles properties on Nantucket and in Boston, MA.
